Evening everyone! How was everyone’s Wednesday? The weekend is almost here (thank goodness!)
Did anyone watch this “gem” of a show on MTV back in the mid to late 90′s?

Singled Out was a game show on MTV where a contestant searched for a date among a “pool” of applicants without ever setting eyes on them. It’s basically a blind date show. Tonight my campus’ Panhellenic Council put together their own version of the game show as a fundraiser. I did not participate, but it was super fun to watch the contestants perform silly stunts, answer questions, and find a date before Valentine’s Day.

One of the silly tasks was to wrap an audience member in toilet paper…
It was a little crazy.
But so much fun! Definitely a way to de-stress from the craziness of this week.
They also had a raffle, and I won a polo (which I may or may not ever wear. We’ll see!) Now, back to this morning…
Breakfast:
When I went grocery shopping on Monday, they did not have very much plain Chobani on the shelves, so I picked up a lemon one and used it this morning…
- I container Chobani Lemon Greek Yogurt
- 1/4 c. multi-grain oats
- 1/4 c. cranberries
- 1 T Mona’s Original Granola
The combination of cranberries and lemon was actually pretty good! I figured that I should use the cranberries at some point, since they have been in my freezer since Thanksgiving (and have been used as ice packs over the past week
)

This morning I had two “quizzes” back to back. The first was in my Vocal Pedagogy class and it was not awful. It was a little confusing but I eventually figured it out. The second “quiz” (ahem, it was more like a test) was in my Advanced Theory III class. The “quiz” consisted of three sections, which alone aren’t too time consuming but when you have all three sections with 6-10 questions each, it is VERY difficult to complete it in the 50 minute class time. The “quiz” started at 10, I was supposed to be done by 10:50, but did not leave the room until close to 11:30!!! And I wasn’t the last person!
I’m HOPING that I did ok. I need a good grade to get back on track in school. Recently I feel like I’ve put in a lot of work, but have not been getting the results I have been expecting.
Remember that essay I had to do a few weeks ago for my study abroad class? I got that back today and received a 64%
! I know that I rushed it, but I honestly did not think the paper was THAT bad. At least the entire class did poorly and he is letting us re-do it, but doesn’t that say something about the teacher if EVERYONE did poorly? Just my opinion
. (I promise I’m not a bad student! Proof!)
After a crazy morning, I needed a simple lunch.
Lunch:
I reheated the lentils from last night and added leftover chickpeas from Tuesday to make a nice spinach salad:
I also had it with a wedge of Laughing Cow Light Swiss Cheese drizzled with Frank’s RedHot Sauce!
And a juicy grapefruit on the side.
After lunch, I had choir rehearsal and then I headed to the gym for a quick workout. I had a sorority meeting that I needed to be at by 4:15, so I had an hour and 15 minutes to workout, go back to my apartment, shower, and then walk across campus to one of my sister’s apartment. Day six of no running left me doing a 35:00 interval speed session on the stationary bike covering 7.11 miles. I definitely worked up a sweat, AND I finished Ultramarathon Man (finally!). Expect a review on the book soon!
I wanted to do a weight workout, but did not have the time, so I pushed it to tomorrow.
The meeting went well, and I got out in just enough time to make a quick run to Publix (to buy yogurt and a green pepper!) before I had to be at the event tonight (which I already covered!).
After Singled Out, I wanted a quick, but nutritious and filling dinner. This meant one of two things: an egg sandwich or a veggie burger.
Dinner:
I opted for the veggie burger tonight.
I cooked a Bruschetta Tomato Basil Parmesan Boca Burger on the Foreman while I roasted veggies in the oven. (Quick tip: If you want roasted veggies in a hurry, crank up your oven to 500 degrees and cook for 15 minutes. Probably not the best way to make them, but you do get them cooked quick!)
Veggie burger on Ezekiel Bread with Frank’s RedHot Sauce (obsessed!)? Don’t mind if I do!
And my beautiful roasted veggies:
I could seriously eat roasted veggies like candy.

Thanks for that tip about roasting veggies! I love roasted veggies, but sometimes I’m so hungry that I just eat them raw!
I remember that show! Such a cute idea to do that.
That looked like so much fun!
And from the teacher’s perspective, I wouldn’t necessarily blame it on him/her. Sometimes students need to be retaught material in a different way than the first time, and that is totally okay. The main goal is to make sure that students DO understand the material and they are assessed on that (ie: your teacher letting you redo your paper).
True, and I thought about that today when I re-read my post. I think I may have been a little harsh in my post.

I love, love, LOVE Frank’s Hot Sauce! I put it in nearly everything I eat, so your obsession is quite understood.
Wow I haven’t heard anyone mention that show in SO long. I used to watch it all the time!
