WIAW: Job Hunt Edition

It’s been over a month since my last What I Ate Wednesday post! Of course it was for good reason since I had other topics I wanted to cover, but I am back.

I am not sure if I will do it every Wednesday as I have in the past, but probably at least once a month. For me personally, having these posts keeps me accountable with my diet and makes sure I don’t eat frozen yogurt for every meal. ;)

Here is my What I Ate Wednesday: Job Hunt Edition…

Breakfast:

Even though I don’t have to rush to work or school at the moment, I am transitioning back into a normal schedule. I got into a nasty sleep schedule over break (going to bed at midnight or later and getting up at 9am) and I am still a little tired from Disney, but today I got up at a normal time!

Since I did not have to go to the gym this morning, I had breakfast at home. I stuck with my standard yogurt bowl with Greek yogurt, oats, strawberries, blueberries, 1/2 banana and chia seeds.

I caught this one eyeballing my breakfast… ;)

Lunch:

After spending a few hours job hunting and going for an easy 3 mile run, I made a quick lunch before running errands.

Leftover brown rice from last night with two eggs (one yolk and two egg whites- I’m making progress!) and carrots with hummus. I also finished off a container of yogurt from last night’s dessert.

Snack #1:

About an hour after lunch, my stomach was growling a little so I ate a mini Clif Bar from my Disney race swag bag before heading out for my errands.

This flavor was ok, but tasted very medicinal to me. :( I probably would not buy this flavor if I saw it at the store.

Snack #2:

A few hours later I had another snack of an apple with peanut butter, cottage cheese, and a cup of almond milk.

I have been really focusing on my nutrition this year and ensuring that I am getting all the vitamins and minerals I need, especially calcium! The almond milk has 45% of the daily recommended value.

Dinner:

I wasn’t incredibly hungry since I had a late snack so I made a salad inspired by my favorite vegetarian salad at Chipotle.

Not a pretty picture but on a bed of romaine and spinach I put the remainder of the brown rice, black beans, mushrooms, zucchini, green peppers, carrots and a dollop of Greek yogurt.

Another hour of job hunting/ applying/ resume editing and I’m off to bed!

  1. This entire applying for jobs business is really hard isn’t it? I am in the same state more or less and writing cover letter is no joke! Ever since I came back from Greece and I am in charge of my eating I am pretty happy with my nutrition. I am not sure whether it is that better or it’s just the fact that I know exactly what I am eating. I admit I am kind of controlling.. ;-)

  3. Best wishes with the job hunt. That can be a frustrating process, but a wonderful feeling when you find one that meets your interests.
