Summery Basil and Oregano Salmon

Last week I missed my first installment of New Eat For The Week but this week I am delivering! Admittedly I was not feeling super creative this week but I hope you enjoy this simple, but delicious dish.

I love seafood, especially fish, and eat it at least once a week. Usually I eat tilapia since it is cheap and easy to cook, but I also love salmon. When I was home last weekend, my mom made salmon one night for dinner. I don’t eat it very often (since it is more expensive) but when I was at the grocery store today, I picked up a small piece to treat myself.
I did not have a lot on hand in terms of ingredients for a marinade, but inspired by some fresh herbs my mom send me back to Jacksonville with, I made a quick marinade for the fish. Usually I associate salmon with more smokey and rustic flavors (like maple) but I was in the mood for a more citrusy fish tonight.
I did some tinkering around and this is what I came up with.
Summery Basil and Oregano Salmon

A quick and simple salmon dish that can be made with only a few simple ingredients. Marinate all day for a more citrusy flavor.
Prep Time: 10 minutes
Assembly/ Cook Time: 35-40 minutes
Serving Size: 2
Ingredients:
- Two 3 oz filets of salmon
- 1 tsp extra virgin olive oil
- 2-3 tablespoons of lemon juice
- 2 tablespoons fresh basil leaves (or 1 T dried)
- 2 tablespoons fresh oregano leaves (or 1 T dried)
- Salt and pepper to taste
- 1 gallon sized plastic bag
- Optional- fresh basil and oregano leaves (for garnish)
Instructions:
- At least one hour prior to cooking: Combine extra virgin olive oil, lemon juice, basil, oregano, salt, and pepper in a gallon sized plastic bag. Add salmon and marinade in the fridge for at least one hour.
- Preheat oven to 350 degrees.
- After the fish has marinated for at least an hour, take out of the bag and cook for 25-30 minutes, or until fish is opaque and flakes easily.
- Garnish the salmon with fresh basil and oregano leaves and serve with greens and vegetables.
This dish was definitely very fresh and delicious. I loved how I could taste the lemon with a hint of the basil and oregano. A perfect fish dish for summer!
With two fish meals in a row, I promise that I will have a non-fish dish next week!
